Last night I made a quick and easy salad for dinner. On warm days, I love salads, so I’ll be eating a lot more of them in the coming weeks! Hopefully this warm weather will decide to finally stay around for good! This time I threw a salmon filet in a baking dish with a little olive oil, kosher salt, pepper, onion and garlic powder. I set the oven at 400 degrees F and let it cook for about 30 minutes.
Once the salmon was done, I put it on top of some mixed spring greens, topped it with some sliced, honey roasted almonds and a balsamic vinaigrette and had an amazing dinner! It doesn’t get much easier, and it was absolutely delicious.
Feel free to add anything else you would like to your salad. I thought some dried cranberries would be a nice addition!
